Easy Shakshuka  Recipe for One

Step 1: Gather all of the ingredients for this shakshuka recipe for one. I use fresh tomatoes, but canned also work.

Step 2: Heat a cast-iron skillet over medium heat. Once hot, add 1 tablespoon olive oil add the onion, and cook for 2-3 minutes.

Step 3: Add the bell pepper and cook for 3-4 mins, or until golden. Add the garlic, spices, and tomato paste and cook for 30 seconds.

Step 4: Add the tomatoes with juices, salt, and black pepper, and stir. Cover with a lid and cook over low heat for 10 minutes.

Step 5: Make spaces for the eggs in the tomato mixture, then gently crack them into the spaces, and sprinkle with salt

Step 6: Cover the pan with a lid and cook for 2-3 minutes, but don't overcook! The egg yolks should be soft and runny.

Step 6: Top with feta cheese, fresh herbs, and a drizzle of olive oil! Serve with crusty bread, naan, or pita.
