In a bowl, add lukewarm water, sugar, and yeast. Mix, then set aside for 10 minutes, until foamy.
In a large bowl, add flour, sugar, and salt, and mix. Add the yeast, melted butter, and non-dairy milk.
Mix everything into a dough and knead for 10 minutes, until the dough is smooth and soft.
Add the dough to a bowl and let it rise for at least 60 minutes, or until it doubles.
After rising, use a rolling pin to roll the dough into an 18 x 12-inch rectangular.
Spread softened butter all over the dough then sprinkle with brown sugar and cinnamon.
From the long end, carefully roll away from you in a tight roll.
Using dental floss or a very sharp knife, cut into 12 even rolls.
Add the rolls to a baking pan and let rise again for 30 minutes, or until doubled.
Bake the cinnamon rolls for 25-30 minutes, or until they're golden brown.
