Creamy Dairy-free Potato Leek Soup

Leeks, potatoes, white beans, garlic, olive oil, vegetable broth, and seasonings!

Sauté leeks in olive oil until soft and golden. Add the minced garlic and cook for 1 minute.

Add white beans, potatoes, fresh thyme, bay leaves, and vegetable broth. Bring to a boil.

Simmer with a lid on for 20 minutes or until the potatoes are soft. Then blend until creamy.

Taste and adjust the seasoning if needed, adding more salt and black pepper to taste. Serve!
