-white onion -celery stalks -garlic -potatoes -broccoli -frozen peas -vegetable broth -salt and black pepper -parsley -full-fat coconut milk
Start by sauteeing onion and celery in olive oil for 3-4 minutes. Then, add garlic and potatoes and cook for 1-2 minutes, or until fragrant.

Next, add vegetable broth, salt, and black pepper and bring to a boil. Simmer for 10 minutes, then add the broccoli and cook for another 10 minutes.

Add the peas, parsley, and coconut milk in the last few minutes. Blend the soup with an immersion blender.
