Creamy  Vegan Polenta

• Fine cornmeal • Vegetable broth • Light coconut milk • Nutritional yeast • Sea salt • Toppings of choice

Prepare the polenta by adding broth, coconut milk, and salt to a pot. Bring to a boil. Turn the heat off and slowly start adding the polenta, whisking constantly.

Cook for 3-4 minutes, then once it thickens, add nutritional yeast and whisk for 1-2 minutes further.

Prepare your toppings of choice. I like to make caramelized onions, but anything you like can be used here!

To a plate, add a few dollops of polenta, followed by your toppings. Serve the vegan polenta right away, while it's still warm!

I love polenta because it is so versatile, and this combo is one of my favorites. It is topped with crispy chickpeas, roasted pumpkin, and caramelized red onion.


Add the cornflour a little bit at a time and whisk constantly. This will ensure you'll end up with a creamy polenta with no lumps.
