To make the pesto, add all of the ingredients (except the oil) to a food processor and blend. Slowly, pour the oil while blending.

Next, cook your pasta in salted boiling water until al dente. Then, drain the pasta and return back to the pot.

Add pesto, spinach, and parmesan (optional) and cook for 2-3 minutes or until everything is well coated.

Serve right away with more parmesan on top, and pair with garlic bread or a green salad on the side.
