Easy Vegan  Tofu Fajitas

Step 1: Gather all of the ingredients for these tofu fajitas. Make sure to use extra-firm tofu for best results.

Step 2: To a large bowl, add the spices, olive oil, lime juice, and 1 tablespoon water. Mix until it forms a paste.

Step 3: Then, cut tofu into strips and dip each piece one by one in the marinade, making sure to coat all sides.

Step 4: Heat oil a cast-iron skillet and fry the tofu over for 3-4 minutes on each side. Once golden brown, remove from the pan.

Step 5: In the same skillet, add the red and green peppers, and onion, alongside a sprinkle of salt and black pepper.

Step 6: Cook the veggies for 5-6 minutes, until they soften, but remain crunchy. Then, add the tofu back in.

Step 7: We like to top these tofu fajitas with cilantro or parsley, and lime juice, and serve them in a warm tortilla.
