EGGPLANT RED LENTIL CURRY

Step 1: To a pot, saute onion, garlic, green chilies, and spices until fragrant.

Step 2: Add chopped eggplants, canned tomatoes, red lentils, coconut milk, salt, and black pepper. Stir.

Step 3: Bring to a boil and cover with a lid. Simmer for 25-30 minutes or until the lentils are cooked through.
