Fluffy Egg-Free  Banana Bread

-ripe bananas -self-rising flour -non-dairy -brown sugar -refined coconut oil


First, start by mashing your bananas with a fork until they turn into puree. Measure to make sure it's 1 1/3 cups exactly.

Then, add refined melted coconut oil, non-dairy milk, and brown sugar and stir until it's well mixed.

As substitutes, you can use white sugar instead of brown sugar and melted vegan butter instead of coconut oil.

Add self-rising flour and use a spoon or a spatula to mix it in just until combined. Do not overmix!

Pour the mixture into a greased pan,  and bake in a preheated oven for 50-55 minutes, or until an inserted toothpick comes out clean.

Let the bread rest in the pan for exactly 5 minutes, then remove it. Cool completely before slicing.

In a bowl, add lukewarm water, sugar, and yeast. Mix, then set aside for 10 minutes, until foamy.
