ingredients  you'll need

-onion and garlic -celery stalks -potatoes -broccoli -frozen green peas -vegetable broth -salt and black pepper - fresh parsley -full-fat coconut milk

Start by sauteeing onion and celery in olive oil for 3-4 minutes. Then, add garlic and potatoes and cook for 1-2 minutes, or until fragrant.

Next, add vegetable broth, salt, and black pepper and bring to a boil. Simmer for 10 minutes, then add the broccoli and cook for another 10 minutes.

Add the peas, parsley, and coconut milk in the last few minutes. Blend the soup with an immersion blender.

Finish with a squeeze of lemon juice if desired! Serve with garlic bread, croutons, or anything you like!

Don't overcook the soup. Simmer just until the vegetables are soft, then remove from the heat. If you cook it for longer you'll lose the vibrant green color.
