Cheesecake Without Cream Cheese

-graham crackers -cottage cheese -condensed milk -melted butter -eggs -granulated sugar -lemon juice -vanilla extract

To a food processor, add the crackers and blend until you have fine crumbs. Then add the melted butter and sugar and blend again.

Pour the mixture into a springform pan. Using a spatula, press down the crumbs firmly into a tight crust. Freeze for 10 minutes.

To the same bowl, add cottage cheese and blend until smooth. Then, add the condensed milk, eggs, vanilla, and lemon juice.

Blend until the filling is smooth and creamy. Don't over blend! You don't want to add too much air into the batter,

Pour the batter over the crust and tap the pan on the counter to release air bubbles. Bake in a preheated oven for 25-30 minutes.

Take it out of the oven and let it cool to room temperature, for at least 1-2 hours. Refrigerate for at least 4 hours to set.

After the cheesecake has rested in the fridge, top it with your favorite jam or syrup, or some fresh fruit like berries.
