Lentil Pot Pie with Puff Pastry

Step 1: In a pot, heat olive oil and cook onion, carrots, celery and mushrooms for 5-6 minutes.

Step 2: Add flour, coconut milk, vegetable  broth, potatoes and spices.  Stir and cook for 10 minutes.

Step 3: Add cooked lentils, and frozen peas, and cook for 5 more minutes.

Step 4: Transfer the mixture to a pie pan, cover with puff pastry, and brush with olive oil.

Step 5: Bake for 35 minutes or until golden. Then let the pie rest for 10 minutes before serving.
