Vegan Mac and Cheese without Cashews

Step 1: Cook pasta according to packaging instructions. Add the frozen peas in the last 2 minutes. Then, drain.

Step 2: To a rimmed skillet, melt vegan butter  and add minced garlic. Cook for  2-3 minutes, until fragrant.

Step 3: Add flour and whisk until a paste is formed. Then, slowly pour the milk while mixing.

Step 4: Add dijon mustard, lemon juice, spices, vegan cheddar, nutritional yeast, and stir.

Step 5: Add the cooked pasta and peas in and toss until they're well coated with the cheese sauce.
