Oat Milk Eggnog Recipe

To a medium bowl, add egg yolks and granulated sugar. Using a whisk, mix until creamy and smooth.

To a saucepan, add oat milk, a pinch of salt, cinnamon, clove and nutmeg. Bring to a boil over medium heat.

Take 1/2 cup of the hot milk and slowly pour it into the egg yolks, while mixing constantly. Make sure to pour gradually to avoid cooking the egg yolk.

Then, gradually pour the tempered eggs into the hot milk, while mixing constantly. Keep the heat to low to avoid cooking the yolks.

Cook for 10 minutes over low-heat, stirring often, or until the eggnog thickens and coats the back of a spoon.

Remove from the heat and stir the vanilla extract. If you want to spike it up, stir a shot of dark rum. Let cool for 1 hour, then serve.
