Ravioli Pomodoro with Parmesan Cheese

Step 1: Gather all of the ingredients for this ravioli Pomodoro. Make sure to use freshly-grated parmesan cheese.

Step 2: Heat olive oil in a large pot. Add the minced garlic and cook for 1 minute, or until fragrant and lightly golden.

Step 3: Add whole tomatoes, basil leaves, salt, and black pepper. Using the back of a spoon, smash the tomatoes to release the juices.

Step 4: Cook for 10-15 minutes, then blend the sauce using an immersion blender until smooth and creamy.

Step 5: Cook the ravioli according to packaging instructions, then drain and add them to the sauce. Stir to coat well.

Step 6: Add a splash of pasta water if needed to loosen up the sauce. Top with parmesan cheese and fresh basil.
