Vegeterian Kimchi Jjigae (spicy tofu stew)

Step 1: Gather all of the ingredients for this Vegetarian Kimchi Jjigae. We recommend to use soft or silken tofu.

Step 2: Add soy sauce, gochujang, gochugaru, sugar, a pinch of msg (optional) to a bowl. Stir until it forms a paste and set aside.

Step 3: To a pot add 1 tbsp oil, add the onion and saute for 4 minutes, until golden. Add the minced garlic, and saute for 30 seconds.

Step 4: Add the kimchi, the spicy paste, and the broth. Stir and cover with a lid. Bring the stew to a boil, then simmer for 15 minutes.

Step 5: Add the tofu, cover and simmer for 5 minutes. Add sesame oil and serve with sesame seeds and green onions!

Step 6: Use well-fermented kimchi. The older the kimchi, the better the stew. Let it ferment away from direct light
