Roasted Sweet Potato Beet Salad

Step 2: Add sweet potatoes, beets, walnuts  and red onion to a baking sheet  and bake for 20 minutes.

Step 3: To make the dressing mix all of the ingredients in a bowl until well combined.

Step 3: To a plate, add your greens of choice and toss with ⅔ of the dressing.

Step 4: Add the roasted vegetables, walnuts, and cheese on top, and drizzle the remaining dressing.
