The Best Crunchy Chickpeas

-cooked chickpeas -extra - virgin  olive oil - ground cumin -smoked paprika -salt -black pepper


First, drain and rinse a can of chickpeas. You can also cook your own chickpeas from scratch if you don't want to use canned.

Then, transfer to a clean kitchen towel and pat dry. Remove any of the skins that come off, this will help the chickpeas to crisp up.

Add chickpeas to a bowl, and toss with spices, salt, black pepper, and oil, until the chickpeas are coated on all sides.

To a cast-iron skillet, add the remaining oil and heat over medium-high heat. Once hot, add the chickpeas and pan-fry for 10-12 minutes, or until golden.

 Cook in batches. You may be tempted to dump the chickpeas all at once, but if you cook them in 2 or 3 batches you'll have far better results.


These crunchy chickpeas are delicious served as a snack on their own, but you can also add them to salads, soups, toast, etc.
