-silken tofu -pasta of choice -raw cashews -nutritional yeast -onion and garlic -lemon juice -olive oil -spices

ingredients You'll need

Soak raw cashews in boiling water for 30 minutes, or until they're plump and soft. When ready, drain and rinse.

step 1

Then, heat oil in a cast-iron skillet over medium heat. Add the onion and saute for 10 minutes, or until golden. Add garlic and saute for 1 minute, until fragrant.

step 2

To a high-speed blender, add the soaked cashews, sauteed onion, silken tofu, lemon juice, pasta water, nutritional yeast, and spices.

step 3

Blend the sauce on high speed until creamy and completely smooth. No chunks of onion should remain.

step 4

Once ready, pour the silken tofu pasta sauce over the cooked pasta and add toss to coat. Add more pasta water if you need to thin out the sauce.

step 5

Cook over medium-low heat for 1-2 minutes, or until the sauce has thickened and coated the spaghetti well.

step 6

Serve right away and top with vegan parmesan and fresh basil! This silken tofu pasta is delicious served with a side salad.

serving

Cook the pasta until al dente. The pasta will continue to cook when you add the sauce later, so don't overcook it when boiling!
