Soak raw cashews in boiling water for
30 minutes
, or until they're plump and soft. When ready, drain and rinse.

Then, heat oil in a cast-iron skillet over medium heat. Add the onion and saute for 10 minutes, or until golden. Add garlic and saute for 1 minute, until fragrant.

To a high-speed blender, add the soaked cashews, sauteed onion, silken tofu, lemon juice, pasta water, nutritional yeast, and spices.

Blend the sauce on high speed until creamy and completely smooth. No chunks of onion should remain.

Once ready, pour the silken tofu pasta sauce over the cooked pasta and add toss to coat. Add more pasta water if you need to thin out the sauce.
