The BEST Vegan Bolognese Sauce

In a large pot, saute a diced onion in oil for 2-3 minutes, until transparent. Then, add carrot, celery, and dried thyme and saute for 5 more minutes.

Add Beyond mince and using a wooden spoon, break the meat into small pieces. Saute for 7-8 minutes, then add minced garlic.

Add tomato paste and cook for 2-3 minutes, or until caramelized. Pour red wine and cook for 2-3 minutes further.

Pour the vegetable broth, and tomato passata, and add the bay leaf, salt, and black pepper. Bring to a boil, then simmer on low for 90 minutes, or until thickened.

When ready, take it off the heat and stir in the basil leaves and soy milk. Taste and adjust the flavor if needed, adding more salt to taste.

Stir frequently! Make sure to stir the vegan bolognese sauce every 10 minutes to prevent it from burning on the bottom.


Serve it with pasta and gnocchi, or use it in lasagna or other Italian dishes. I like to use wider pasta like pappardelle.
