To a large mixing bowl, add onion, garlic, breadcrumbs, and milk. Let it soak for 5 minutes to soften the breadcrumbs.

To the same bowl, add the remaining ingredients - beyond meat, flax egg, ketchup, mustard, chopped parsley, and spices.

Either using your hands or a wooden spatula, mix until everything is well incorporated. This will help to flavor the meat.

Transfer the meatloaf mixture to a loaf pan and press down firmly with your hands, smoothing out the top. Bake for 40 minutes.

In the meantime, in a small bowl, stir the ketchup, white vinegar, and brown sugar. This will be our glaze.

After 40 minutes, take the meatloaf out of the oven and brush the top with half of the ketchup glaze. Return to bake for 20 more minutes.

When ready, take it out of the pan and place it on a cooling rack for 30-40 minutes to let it cool. Brush with the remaining glaze.

Serve the vegan meatloaf over a bed of mashed potatoes and next to green beans. Top with chopped parsley.
