Tofu Buddha Bowls with Peanut Sauce

-extra-firm tofu -cooked rice -veggies of choice -peanut butter -soy sauce -cornstarch -sriracha -rice vinegar -avocado

ingredients You'll need

Wrap your block of tofu in a kitchen towel. Place a few heavy objects on top of it and let it press for 30 minutes to 2 hours to get rid of excess moisture.

step 1

Cut the tofu into 1-inch cubes and add to a bowl. Add soy sauce, sriracha, and black pepper. Toss to coat, then add the cornstarch.

step 2

Take a baking sheet and add brush it vegetable oil or olive oil. Add the cubed tofu, leaving enough space in between each piece so steam can escape.

step 3

Bake for 20-25 minutes in a preheated oven to 390ºF (200ºC), flipping halfway through, or until the tofu is crispy and golden brown.

step 4

In a small bowl, add peanut butter, soy sauce, sesame oil, rice vinegar, and sriracha. Using a whisk or a fork, mix until smooth and creamy.

step 5

Add your cooked rice to the bottom of a large bowl and top with your crispy tofu, vegetables, and avocado. Add a generous drizzle of the peanut sauce.

Switch up the vegetables! The best part of this tofu Buddha bowl is that it's versatile and customizable. You can use any of your favorite vegetables.
