Creamy  Tofu Pasta Recipe

Reader review

"I wanted to make a creamy pasta without any dairy and this one hit the spot. The sauce is  delicious."  -Emily

• Silken tofu • Spaghetti • Raw cashews • Nutritional yeast • Onion and garlic • Salt + black pepper • Lemon juice • Olive oil

ingredients You'll need:

Soak raw cashews in boiling water for 30 minutes, or until they're plump and soft. When ready, drain and rinse.

step 1

Then, sauté the onion for 10 minutes, or until golden. Add garlic and sauté for 1 minute, until fragrant.

step 2

Sign up now.

To a high-speed blender, add the soaked cashews, sauteed onion, silken tofu, lemon juice, pasta water, nutritional yeast, and spices.

step 3

Blend the sauce on high speed until creamy and completely smooth. No chunks of onion should remain.

step 4

Once ready, pour the tofu pasta sauce over the cooked pasta and add toss to coat. Add more pasta water if you need to thin out the sauce.

step 5

Cook over medium-low heat for 1-2 minutes, or until the sauce has thickened and coated the spaghetti well.

step 6

Cook the pasta until al dente. The pasta will continue to cook when you add the sauce later, so don't overcook it when boiling!
