Vegan Lemon Pie  with Oat Crust

Step 1: Gather all of the ingredients for this vegan lemon pie. Make sure to check if your oat flour is gluten-free.

Step 2: Make the dough for the crust by mixing everything into a bowl. Mix until a ball is formed, then roll it out into a crust.

Step 3: Transfer the rolled dough into a pie tin and press the bottom and the sides into the tin to form a crust.

Step 4: Freeze the crust for 15 minutes, then bake in a pre-heated oven for 20 minutes. Let it cool completely.

Step 5: To a medium pot, add the ingredients for the filling. Bring to simmer, and cook for 5-8 minutes, stirring often, until it thickens.

Step 6: Let the lemon filling cool completely, then transfer it into the cooled crust and smooth the top with a stapula.

Step 7: Let it rest overnight in the fridge before cutting. Top with fresh fruit, lemon slices and fresh mint if desired.
