Vegan Golden Noodle Soup

Step 1: Cook noodles according to packaging instructions. Drain well and drizzle with sesame oil.

Step 2: In a large pot, cook onion, ginger, and  garlic for 2-3 minutes. Then add the  spices, and cook for 1 more minute.

Step 3: Add the vegetables, soy sauce, miso paste, broth, and dried mushrooms. Simmer for 20 minutes.

Step 4: Then, remove the dried mushrooms from the soup. Add chopped parsley, tahini, rice vinegar, and stir.

Step 5: To a bowl, add some of the cooked noodles on the bottom, and pour the soup all over.
