The Best Vegan Potato Leek Soup

Step 1: Sauté leeks and garlic in olive oil until soft and lightly golden.

Step 2: Add white beans, potatoes, fresh thyme, bay leaves, and vegetable broth.

Step 3: Simmer with a lid on for 20 minutes or until the potatoes are soft.  Then blend until creamy.
