• Extra-firm tofu • Rice paper wraps • Cooked rice noodles • Veggies of choice • Fresh herbs • Soy sauce • Spices • Cornstarch

ingredients You'll need:

Press tofu by wrapping paper towels around it, and placing something heavy on top for 30 minutes. Then, slice it into thick, long slices.

Transfer to a bowl and add soy sauce, oil, spices, cornstarch, and stir to coat. Bake for 20 minutes or until golden. Let it cool completely before using.

Quickly dip a piece of rice paper wrap in lukewarm water. Add to a plate or a board and place your filling.

Roll tightly like you'd roll a burrito. Repeat the process with the rest of the wrappers until all are done.

This is optional, but you can make a dipping sauce with peanut butter, soy sauce, minced garlic and ginger, lime juice, and maple syrup for more flavor.

Serve these vegan tofu spring rolls right away, or store them in an airtight container in the fridge for up to 2 days!


Don't soak the rice paper in the water for too long! A quick dip is all you need, otherwise, the wrap will start to fall apart.
