Whole Wheat Crepes  (3-Ingredients)

-2 large eggs -whole wheat flour -non dairy milk such as almond or soy.

Add eggs to a bowl and mix well. Add almond milk and mix once again. You can also use oat milk or coconut milk.

Then, sift the flour into the bowl, and using a whisk, mix until a smooth batter is formed. Don't overmix!

Let the batter rest for 30 minutes. This is optional, but when we tested it we've found that it makes a difference.

Heat some oil in a non-stick pan or a pancake pan. Once hot, pour the crepe batter and cook for 1 minute.

Flip, and cook for 30 more seconds, until golden. Repeat the process with the rest of the batter.

Don't make the batter too thick. Crepes are basically thin pancakes so it's important for the batter to be pourable and on the thinner side.

We like to serve these whole wheat crepes with fresh fruit and yogurt, but you can add anything you want.
