Equipment

  • 12 Bamboo skewers
  • A baking brush

Ingredients
  

  • 24 grape or cherry tomatoes
  • 24 fresh baby mozzarella balls * (use vegan cheese if needed)
  • 12 green olives, pitted
  • 10-15 small radishes
  • 1 medium cucumber, peeled and sliced
  • 1 cup roughly chopped lettuce, any kind you like
  • 10-15 basil leaves
  • 2 tablespoon Olive oil, for brushing
  • Salt, to taste
  • 2-3 teaspoon balsamic glaze, for drizzling (optional)

Instructions
 

  • If you haven't already, go ahead and wash and prepare your vegetables.
  • To assemble the kabobs, alternate treading a tomato, a slice of cucumber, mozzarella ball, an olive, a radish, some lettuce, and a basil leaf. You can do it in whatever order you like. Repeat until you have 12 skewers.
  • Transfer the salad kabobs to a plate and brush with olive oil on all sides. Sprinkle a little bit of salt all over. Finally, drizzle with balsamic glaze and serve right away.

Notes

Make-ahead instructions
After assembling, these salad kabobs will keep in the fridge for about 24 hours. Transfer them to a container, and cover them with a lid. Be sure to brush with olive oil and sprinkle with salt right before serving, this will help to keep them fresh.
*Keep in mind that if you're using a saltier cheese, you'll need to add less salt or omit it entirely.
