This Baked Pumpkin Feta Pasta is a fall version of the TikTok viral recipe. It features creamy feta cheese, roasted pumpkin, and fresh sage leaves, all coming together into a flavorful pasta sauce.
700gbutternut squash or pumpkincubed into 1" pieces
200gblock of feta cheese
1tablespoonolive oil
5-6sage leaves, chopped
¼teaspoonfreshly cracked black pepper
½ - 1cuppasta water
300gpasta of choicegluten-free if needed
Instructions
Pre-heat oven to 390ºF (200ºC). To a baking dish, add the pumpkin and toss with the olive oil, sage, and black pepper. Add the feta cheese block in the middle.
700 g butternut squash or pumpkin, 200 g block of feta cheese, 1 tablespoon olive oil, 5-6 sage leaves, chopped, ¼ teaspoon freshly cracked black pepper
Bake for 30-35 minutes, or until the pumpkin is completely soft and easy to pierce with a fork.
In the meantime, bring a pot of salted water to a boil. Cook the pasta according to packaging instructions, until al dente. Before draining, reserve 1 cup pasta of water.
300 g pasta of choice
When the pumpkin is ready, take the baking dish out of the oven. Mash everything with a fork, until smooth. Add the pasta water to form a sauce. Start with ½ cup and add more later if needed.
½ - 1 cup pasta water
Add the cooked pasta into the sauce and toss to coat. Taste and adjust the flavor if needed, adding salt or black pepper to taste. Serve!
