Baked Feta Pasta with Pumpkin

Ingredients
- 700 g butternut squash or pumpkin cubed into 1" pieces
- 200 g block of feta cheese
- 1 tablespoon olive oil
- 5-6 sage leaves, chopped
- ยผ teaspoon freshly cracked black pepper
- ยฝ - 1 cup pasta water
- 300 g pasta of choice gluten-free if needed

Instructions
- Pre-heat oven to 390ºF (200ºC). To a baking dish, add the pumpkin and toss with the olive oil, sage, and black pepper. Add the feta cheese block in the middle.700 g butternut squash or pumpkin, 200 g block of feta cheese, 1 tablespoon olive oil, 5-6 sage leaves, chopped, ยผ teaspoon freshly cracked black pepper
- Bake for 30-35 minutes, or until the pumpkin is completely soft and easy to pierce with a fork.
- In the meantime, bring a pot of salted water to a boil. Cook the pasta according to packaging instructions, until al dente. Before draining, reserve 1 cup pasta of water.300 g pasta of choice
- When the pumpkin is ready, take the baking dish out of the oven. Mash everything with a fork, until smooth. Add the pasta water to form a sauce. Start with ยฝ cup and add more later if needed.ยฝ - 1 cup pasta water
- Add the cooked pasta into the sauce and toss to coat. Taste and adjust the flavor if needed, adding salt or black pepper to taste. Serve!
