    Sun-Dried Tomato Pasta

    This sun-dried tomato pasta comes together in less than 30 minutes and requires NO chopping! It features sun-dried tomatoes, fresh basil, nutritional yeast and silken tofu, packing a protein punch in every serving!

    Ingredients

    • 400 g pasta of choice gluten-free if needed
    • 350 g silken tofu
    • 70 g sun-dried tomatoes
    • 200 g roasted red peppers
    • 3 garlic cloves
    • 6 basil leaves
    • ½ - 1 cup pasta water
    • ¼ cup nutritional yeast
    • ½ teaspoon red pepper flakes
    • ½ teaspoon smoked paprika
    • 2 tablespoon tomato paste

    Instructions

    • Cook the pasta in salted boiling water according to package instructions, until al dente. Before draining, reserve 1 cup of the pasta water.
      400 g pasta of choice
    • To a blender, add all of the ingredients except the pasta. Blend until smooth and creamy.
      350 g silken tofu, 70 g sun-dried tomatoes, 200 g roasted red peppers, 3 garlic cloves, 6 basil leaves, ½ - 1 cup pasta water, ¼ cup nutritional yeast, ½ teaspoon red pepper flakes, ½ teaspoon smoked paprika, 2 tablespoon tomato paste
    • Transfer the sauce to a pot and warm it up over medium heat, stirring occasionally.
    • Add the pasta to the pot and toss to coat. Add a splash of pasta water if needed. Serve with the your favorite cheese on top (I use stracciatella).
