Ingredients
- 2 tablespoon olive oil
- 5 garlic cloves, minced
- 2 tablespoon tomato paste
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon oregano
- ½ cup red wine optional, or substitute for more broth
- 2 cans black beans, with juices
- 1 can chopped tomatoes
- ½ cup vegetable broth or water
- 2 teaspoon chipotle paste
- 1 bay leaf
- 20 g dark chocolate 80% or higher
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Juice from 1 lime

Instructions
- Heat olive oil in a large Dutch oven. Once hot, add the garlic and saute for 30 seconds, until fragrant, stirring often to prevent burning.2 tablespoon olive oil, 5 garlic cloves, minced
- Add the spices and tomato paste and cook for 2 more minutes, until the tomato paste caramelizes and darkens in color.2 tablespoon tomato paste, 1 tablespoon ground cumin, 1 teaspoon smoked paprika, ½ teaspoon oregano
- Add the canned tomatoes, black beans, vegetable broth, chipotle peppers, bay leaf, salt, and black pepper. - Remove the lid and simmer over medium-high heat for 20 minutes, or until thickened to your liking.
