    Chipotle Black Beans (No Chop!)

    This smoky Chipotle Black Bean Chili is a quick, one-pot meal perfect for chilly days. It's plant-based, comforting, and has just the right amount of spice - plus, it's ready on the stovetop in 30 minutes with simple pantry staples. The best part - it requires NO chopping!

    Ingredients

    • 2 tablespoon olive oil
    • 5 garlic cloves, minced
    • 2 tablespoon tomato paste
    • 1 tablespoon ground cumin
    • 1 teaspoon smoked paprika
    • ½ teaspoon oregano
    • ½ cup red wine optional, or substitute for more broth
    • 2 cans black beans, with juices
    • 1 can chopped tomatoes
    • ½ cup vegetable broth or water
    • 2 teaspoon chipotle paste
    • 1 bay leaf
    • 20 g dark chocolate 80% or higher
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • Juice from 1 lime

    Instructions

    • Heat olive oil in a large Dutch oven. Once hot, add the garlic and saute for 30 seconds, until fragrant, stirring often to prevent burning.
      2 tablespoon olive oil, 5 garlic cloves, minced
    • Add the spices and tomato paste and cook for 2 more minutes, until the tomato paste caramelizes and darkens in color.
      2 tablespoon tomato paste, 1 tablespoon ground cumin, 1 teaspoon smoked paprika, ½ teaspoon oregano
    • Add the canned tomatoes, black beans, vegetable broth, chipotle peppers, bay leaf, salt, and black pepper. Cover with a lid and bring to a boil.
      2 cans black beans, with juices, 1 can chopped tomatoes, ½ cup vegetable broth or water, 2 teaspoon chipotle paste, 1 bay leaf, ½ teaspoon salt, ¼ teaspoon black pepper
    • Remove the lid and simmer over medium-high heat for 20 minutes, or until thickened to your liking.
    • Stir the lemon juice and dark chocolate and enjoy!
      20 g dark chocolate, Juice from 1 lime

    Cashew cream recipe
    Ingredients:
    ½ cup raw cashews, boiled for 10 minutes
    ½ cup water
    2 tablespoon nutritional yeast
    Juice from ½ lemon
    salt to taste
