    Pink Goddess Butter Beans (No Chop)

    These pink goddess butter beans taste as good as they look! They pack 33 grams of protein per serving and require absolutely no chopping. Perfect for my busy folks who have only 30 minutes to spend in the kitchen and want something healthy and delicious.

    Ingredients

    • 300 g canned beets, drained measured after draining
    • 300 g silken tofu
    • juice from ½ lemon
    • ½ cup nutritional yeast
    • ¼ cup vegetable broth or water
    • 1 tablespoon olive oil
    • 4 cloves of garlic minced
    • 600 g butter beans drained and rinsed
    • ¼ teaspoon salt
    • Black pepper, to taste

    Instructions

    • To a blender add beets, tofu, lemon juice, broth water, salt and black pepper. Blend until smooth.
    • In a Dutch oven or a rimmed skillet heat the olive oil. Add the garlic and saute for 30 seconds, until fragrant. Add the beet sauce.
    • Add the butter beans and heat over medium-high heat or until warmed through. Serve with crusty bread on the side!
