There is nothing quite like a big bowl of tomato soup served with a warm grilled cheese on the side. It's as comforting as food gets, am I right?

This Provolone Grilled Cheese is melty, gooey, and SO cheesy, and the addition of honey takes it to a whole new level!

    Ingredients and Notes

Gathered ingredients for making provolone grilled cheese with honey.
    • Cheese: Besides provolone, we also use mozzarella, but you can substitute it with gouda, Havarti, Аmerican cheddar, or any other that you like.
    • Bread: We use sourdough, but feel free to use any bread you like.
    • Butter: Use room temperature butter for easier spreading. If your butter is cold, you can slice it into squares and microwave it for 10 seconds on each side or until soft.

How to Make Provolone Grilled Cheese with Honey

    Step 1

Spread butter on one side of each slice of bread. Then, flip it with the buttered side down.

    Step 2

Add sliced provolone and mozzarella (or another cheese of choice), and close with another slice of bread, with the buttered side up.

    Step 3

Heat a cast-iron skillet over medium-low heat. Once hot, add the sandwiches to the pan and cook for 3-4 minutes, then flip.

Cook for another 2-3 minutes, or until both sides are golden and the cheese is inside melted.

    Step 4

Finally, remove from the heat and drizzle with honey on top. Serve right away!

    Expert Tips

    • Cook on medium-low or low heat. If you cook on high heat, your toast will burn before the cheese has had the time to melt.
    • Cover with a lid if needed. If your cheese is not melting properly, cover with a lid for 1-2 minutes to trap the heat inside.
    • Make sure your bread slices are not too thick. If the bread is too thick, the heat won't be able to get to the cheese as quickly. The ideal thickness of the bread is between ¾″ to 1″ (2cm to 2.5cm).
    • Drizzle the honey right before serving. This grilled cheese tastes best when served fresh, mainly because the honey can make the bread soggy after a while.

    FAQ

Which bread is the best to use?

You need soft, crusty bread in order to make the best grilled cheese sandwich. We like to use sourdough, but you can use regular white bread, Pullman loaf, ciabatta, and even English muffins.

What can I substitute for butter?

You can use either mayo or olive oil. Keep in mind that mayo will leave a mayo-like taste because it's not as neutral.

Can I make it in the air fryer?

Yes! You'll need to pre-heat your air fryer to 375F, then add your sandwiches. Cook for 3 minutes on each side or until golden.

Can provolone grilled cheese be reheated?

Yes! You can reheat it in the oven, air fryer, or on the stovetop. You can also do it in the microwave, but it's our least favorite because it makes the bread soggy and doesn't give you the crispy edges.

    Equipment

    • Stovetop

    Ingredients

    • 2 tablespoon butter, softened
    • 4 pieces of bread (we like sourdough)
    • 4 slices provolone cheese
    • 2 slices mozzarella cheese or any other cheese you like (such as American cheddar, gouda, Havarti, etc.)
    • 2 tablespoon honey

    Instructions

    Stovetop

    • Spread ½ tablespoon butter on one side of each slice of bread.
    • Set a skillet over medium-low heat. Once hot, add 2 slices of bread with the butter-side down. Add provolone and mozzarella slices to one of the slices and cook for 2-3 minutes, or until golden brown.
    • Close the sandwich with the golden brown side on the outside. Continue cooking for 3-4 minutes, flipping ones and pressing down the sandwich, until the cheese melts. (If the cheese is not melted, but the bread is done, you can put a lid on your skillet and let it cook for 2-3 more minutes.)
    • Drizzle honey right before serving.

    Air fryer

    • Pre-heat air fryer to 375ºF (190ºC). Spread ½ tablespoon butter on one side of each slice of bread.
    • Assemble the sandwiches by adding sliced cheese on the side of the bread that isn't buttered and close with another slice of bread with the butter-side up.
    • Transfer the sandwich to the air fryer basket, and cook for 3 minutes. Then, flip and cook for 3-4 minutes or until golden brown. Drizzle honey right before serving.

    Oven

    • Pre-heat oven to 375ºF (190ºC). Spread ½ tablespoon butter on one side of each slice of bread.
    • Assemble the sandwiches by adding sliced cheese on the side of the bread that isn't buttered and close with another slice of bread with the butter-side up.
    • Transfer sandwiches to a baking sheet and bake for 5-6 minutes, then flip and bake for another 5-6 minutes or until golden brown on both sides and melty on the inside. Drizzle honey right before serving.

    Notes

    Storage
Fridge: Let the sandwich cool completely. Wrap in foil and refrigerate for 3-4 days.
Freezer: This recipe is not freezer-friendly.
    To reheat
Stovetop: Heat a skillet over medium-low until hot. Add a little bit of butter and once melted, add the sandwich. Place on a lid and cook for 2-3 minutes, then remove the lid, flip and cook for another 2-3 minutes with no lid on, until warmed through and melty inside.
Oven: Pre-heat oven to 375ºF (190ºC). Add sandwich to a baking sheet and bake for 5 minutes, then flip and bake for 5 more minutes.
Microwave: We don't recommend this method. However, if you want to do it, first transfer grilled cheese to a plate and cover it with a microwave-safe lid. Cook for 1 minute or until warmed through.
