SUMMARIZE & SAVE THIS RECIPE ON:
I've spent years trying to find the perfect baked fry recipe. I've tried high heat, cornstarch, parboiling... and ended up with so many soggy batches that couldn't come close to a real fried potato.
Then I landed on the technique that fixed everything: cut, soak, dry, and most importantly, preheat your baking sheet. This gives you fries with a crisp exterior and a fluffy inside, without that heavy feeling you get after eating something deep-fried.
The homemade Cajun spice blend comes together in minutes and coats every fry in smoky, savory flavor with just the right amount of heat. Since we aren't using a ton of oil, these homemade Cajun fries are healthier and naturally gluten-free!

Why You'll Love This Recipe
- Made with simple ingredients. This recipe doesn't use any fancy ingredients or techniques and is super easy to make.
- Customizable. You can control how salty, spicy, and seasoned you want your fries to be.
- Healthier than regular fries. You'll need only a small amount of vegetable oil to coat the potatoes before air frying or baking them. If you're a regular reader, you know I love transforming fast food meals into healthier options, just like I did with this copycat spicy eggplant tofu.
- Seasoned with a homemade Cajun blend that actually works. Smoky paprika, a touch of heat, and a pinch of sugar to balance out the heat make the fries just like the real thing.

Ingredients

- Potatoes: I like to use Yukon Gold for their buttery, sweet flavor, which is the reason I prefer them in most of my recipes, such as in my non-dairy potato leek soup. Russet potatoes are higher in starch and lower in moisture, so they crisp up more, but they lack the rich flavor of the Yukon Gold. Either works here, so use what you have.
- Spices: To make the Cajun spice blend, you'll need smoked paprika, garlic powder, onion powder, oregano, thyme, and red pepper flakes or cayenne pepper. Make sure you're using smoked paprika and not regular, as it's what gives the fries that deep, slightly earthy flavor that makes the seasoning taste more complex.
- Oil: Use canola, olive oil, or peanut oil for best results. Five Guys fries are made with peanut oil, but if you have nut allergies, use canola oil instead.
- Granulated sugar: It's optional but mellows the spiciness of the Cajun spice mix without making your fries sweet. For a sugar-free version, you can skip it if you want, but the flavor may be slightly different.
See the recipe card below for the full list of ingredients and exact measurements.
Variations
- Extra spicy: For a bit more heat, add a ¼ teaspoon of cayenne or a drizzle of hot sauce after cooking.
- Mild version: If you prefer your fries a bit milder, omit the red chili flakes, but keep the smoked paprika for flavor without adding any heat.
- Sweet potato cajun fries: Use sweet potatoes instead of russet potatoes. They will cook faster, so reduce cook time by 5 minutes.
- Leftover seasoning: The blend works great on popcorn, fried chickpeas, or just about any protein. I had leftover seasoning, but you can also make a double batch to keep on hand to use.
How to Make Five Guys Cajun Fries at Home

Step 1: Wash, peel, and cut your potatoes into strips. To do this, cut each potato in half lengthwise, then lay the flat side down for stability. Slice lengthwise into ½-inch planks, then cut each plank into ½-inch strips. Most restaurants cut their fries thinner, but I find that ½-inch fries work better for baking, allowing them to crisp up more since there is a bigger surface area.

Step 2: This step is optional, but it helps to get rid of some of the starch from the potatoes, which makes crispier fries. Fill a large bowl with water, add ice, and add the potatoes. Soak for at least 30 minutes, then drain and rinse.
Cutting Fries Tip: Keep them as uniform as possible, as even-sized fries cook at the same rate, so you won't end up with some burnt and some underdone. For more even results and to make slicing easier, try using a mandoline instead of cutting them by hand!

Step 3: Lay them on a few layers of paper towels and dry very well. This is important to make sure that the seasoning will stick properly and that you won't end up with soggy fries. At this point, you also want to preheat the oven to 390ºF (200ºC) and place your baking tray in the oven to heat at the same time. This is my secret trick to crispier fries!

Step 4: Add the potatoes to a bowl and coat with 1 tablespoon of oil. Then, add the spice mix and stir until every last fry is well-coated.

Step 5: Take the hot baking sheet out of the oven and spray it generously with cooking spray. Add the fries in a single layer, allowing some space in between the potatoes. This keeps them from steaming, so you end up with crispier fries.

Step 6: Bake for 35-40 minutes, flipping halfway through, until golden brown. Finish by sprinkling a little bit of sea salt before serving.
Enjoy your fries alongside your favorite dips and sauces or serve as a side dish to 10-minute Beyond meat burgers, meaty vegan bean chili, and even eggs shakshuka.
How to Make Cajun Fries in the Air Fryer
These Five Guys-style fries work equally well in the air fryer!

Step 1: Preheat your air fryer to 390ºF (200ºC) and spray the basket with cooking spray. Add the fries in a single layer. Be sure you don't overcrowd the basket, as the fries need space for the hot air to circulate and crisp them up properly. Depending on the size of your air fryer, you may need to work in batches.

Step 2: Cook for 20-25 minutes, flipping halfway through, until golden brown.
👩🏼🍳 Petra's Tips
- Cut the fries into similar sizes. This ensures that they will cook evenly and at about the same time.
- Soak the potatoes in ice-cold water. If you have the time, I recommend soaking the fries anywhere from 30 minutes to 2 hours to get rid of the starch.
- Dry them very well before seasoning. After soaking, make sure to completely dry the potatoes. This will help the seasoning stick better and will prevent the potatoes from getting soggy.
- Preheat your baking sheet. Instead of using parchment paper, preheat your baking sheet and spray it with cooking spray. This creates a non-stick layer, and since you're not using parchment paper, the potatoes can have direct contact with the surface and get super crispy.
- Work in batches if needed. It's essential not to overcrowd the air fryer basket or the baking sheet. If you don't give the potatoes enough space, they'll steam instead of crisping up and will end up being soggy. This is something that I learned when I tested my baked teriyaki wings recipe.
Five Guys Cajun Fries Recipe FAQs
Five Guys' seasoning is made from smoked paprika, dried oregano, dried thyme, onion and garlic powder, red chili flakes, and salt and black pepper. Their secret ingredient is adding granulated sugar to the spice mix, which balances the spicy flavors.
This recipe is moderately spicy. If you don't like spicy food, you can simply omit the red chili flakes, and if you want to make your fries spicier, you can add ¼- ½ teaspoon cayenne pepper.
The best method is the oven or air fryer, although they won't get as crispy as they were when they were fresh. Preheat the oven or air fryer to 400°F (205°C). Bake for 10 minutes, or air fry for 4-5 minutes, tossing halfway through.
IMO, yes. I highly recommend soaking the potatoes to make the fries extra crispy. If you can't remember to soak them a few hours before, you can soak them overnight (up to 12 hours) and keep them in the fridge. Make sure there is enough water, as they will absorb some of it.
Russet potatoes are usually recommended as they're high in starch and low in moisture, so they crisp up nicely, but they're fairly bland.
That said, I usually reach for Yukon Gold because I love their buttery, slightly sweet flavor. They're less starchy, so they don't get as crispy, but with this technique (soaking, then adding to a hot baking sheet), the difference isn't something to write home about. What you want to avoid is waxy potatoes (like red or new potatoes), which are too low in starch to give you a good result.
Yes! If you can't be bothered to make your own seasoning mix, you can order Cajun seasoning from Amazon or pick up your favorite brand at the store. You will need to add about 3-4 teaspoons of the spice mix to season your fries. Check the label as you might want to mix in the sugar if your blend doesn't have it.
Yes, you can! The best way to prep these ahead is to cut and soak the potatoes up to 12 hours in advance. Keep them submerged in cold water in the fridge, then drain, dry, and season just before cooking. Avoid seasoning too early, as moisture will dilute the spices and prevent them from sticking properly.

Serving
Enjoy these Cajun fries alongside a homemade burger in true Five Guys fashion. It also goes great with vegan chickpea "chicken" salad and a grilled cheese with provolone.
For dipping, I suggest 5-Ingredient guacamole or egg-free Big Mac sauce, and even my simple Oreo milkshake (no ice cream) in true American fashion.
Storage
- Freeze: These fries freeze well before cooking and save you cooking time during the week. Spread the seasoned raw fries in a single layer on a baking sheet and freeze until solid, then transfer to a freezer bag. When ready to cook, there's no need to thaw - just add 8-10 minutes to the regular cook time.
- Store: These fries are best served fresh, but leftovers will keep in an airtight container in the fridge for 3-4 days. To reheat, skip the microwave. The air fryer at 400°F for 4-5 minutes restores most of the crunch and is by far the best method, but you can also reheat in the oven as well.

- This is optional, but it helps to get rid of some of the starch, which results in crispier fries. Fill a large bowl with water and add plenty of ice, then add the potatoes. Soak for at least 30 minutes, then drain and rinse.

Air fryer method
- If using an air fryer, preheat it to 390ºF (200ºC). Spray the air fryer basket with cooking spray, then add the fries in a single layer. Cook for 20-25 minutes, or until golden brown.
- Finish by sprinkling a little bit of sea salt before serving.
Notes
- Cut the fries into similar sizes. Even-sized fries cook at the same rate - you won't end up with some overdone and some still soft in the middle.
- Soak the potatoes in ice-cold water. Soak for at least 30 minutes, or up to 2 hours if you have the time. This draws out excess starch and is the key to getting a crispy result without deep frying.
- Dry them very well before seasoning. After soaking, pat the fries completely dry with paper towels. Any leftover moisture will prevent the seasoning from sticking and lead to soggy fries.
- Preheat your baking sheet. Skip the parchment paper - preheat the baking sheet and spray it with cooking spray instead. Direct contact with the hot surface is what gives the fries a crispy bottom.
- Don't overcrowd the pan or basket. Fries need space around them to crisp up. Too many in at once and they'll steam instead - work in batches if needed.
- Storage: Best served fresh. Leftovers keep in an airtight container in the fridge for 3-4 days. To reheat, use the air fryer at 400°F for 4-5 minutes - it brings most of the crunch back. Avoid the microwave.

I did not love the seasoning on the fries, it was way too sweet compared to 5 Guys. However, it is DELICIOUS on popcorn. Sounds weird but the combination of sweet, smoky, salty, and a little spicy gives a spiced kettle corn vibe.

Hi Rachel. Sorry to hear you didn't enjoy the seasoning as much, many readers have loved it. Maybe try adding less sugar next time, or omitting it entirely? And thanks for the popcorn trick! 🙂
