Aquafaba Chocolate Mousse
Ingredients
- 100 g dark chocolate I use 80%
- 60 ml chickpea water aka aquafaba
- ½ cup Greek-style yogurt use vegan if needed
- 2 tablespoon sugar optional, to make it sweeter
Instructions
- Melt chocolate over a double boiler. Once ready, mix with the yogurt until creamy.100 g dark chocolate, ½ cup Greek-style yogurt
- Using either a stand mixer or a handheld mixer, beat the chickpea water and sugar (optional) until stiff peaks, usually around 8-10 minutes.60 ml chickpea water, 2 tablespoon sugar
- Once ready, gently combine the chocolate yogurt mixture with the whipped aquafaba. Transfer into cups and refrigerate overnight. Enjoy!
