- Tomatoes: Grape or cherry tomatoes work best here. Look for small to medium-sized tomatoes that are not too ripe so they don't crush when you tread them.
- Cucumber: We like to use fresh a cucumber here, but you can also use pickles.
- Basil: We love the flavor and depth of basil, but you can also use cilantro, parsley, or fresh mint.
- Cheese: Baby mozzarella is an amazing option, but feta, cheddar, or provolone cheese will also work great.
- Olives: Whatever your favorite olives are- green, black, kalamata, etc.
How to make salad kabobs
Wash, cut, and prepare the vegetables and your herbs of choice.
To assemble the salad kabobs, alternate treading the ingredients onto the skewers. Make sure that each skewer has a bit of everything- mozzarella, tomatoes, olives, radishes, basil, etc.
You can do it in whatever order you like. Repeat until you have 12 skewers.
Transfer them to a plate and brush each one with olive oil on all sides. Then, sprinkle with a little bit of salt all over.
Finally, drizzle the balsamic glaze and serve right away!

Equipment
- 12 Bamboo skewers
- A baking brush
Ingredients
- 24 grape or cherry tomatoes
- 24 fresh baby mozzarella balls * (use vegan cheese if needed)
- 12 green olives, pitted
- 10-15 small radishes
- 1 medium cucumber, peeled and sliced
- 1 cup roughly chopped lettuce, any kind you like
- 10-15 basil leaves
- 2 tablespoon Olive oil, for brushing
- Salt, to taste
- 2-3 teaspoon balsamic glaze, for drizzling (optional)
Instructions
- If you haven't already, go ahead and wash and prepare your vegetables.
